These delicious baked doughnuts are on our new menu and they’re a real treat. They are baked rather than deep-fried and we have a different flavour each day of the week. They are risen with yeast, like a bread. If you have a mixer with a dough hook you can knead them with this, otherwise turn the mixture out on a lightly floured board and knead by hand. The recipe makes 5-6 quite large doughnuts.
Ingredients
35g yeast
2 tsp sugar
30ml milk
75g sugar
2 cups flour
pinch of salt
1/3 cup buttermilk
1 egg
20g butter
Instructions
- Combine the yeast, warmed milk and the first measure of sugar in a bowl
- Let sit for 10 minutes until frothy
- Combine the flour and the second measure of sugar with the salt in a mixing bowl
- Gradually add the yeast mixture, buttermilk, egg and butter and knead gently 5 minutes until smooth and elastic
- Place the dough in an oiled bowl (it should be quite a wet dough) and cover with plastic wrap
- Leave to rise 1 – 1 1/2 hours or until doubled in size
- Turn the dough out on to the board again and knock down
- Roll in to a sausage shape and cut into 5 or 6 equal pieces, then roll each piece into a smooth ball.
- Place on an oiled baking tray and flatten each piece into a 9cm wide disc
- Use a 3.5cm cutter to make a hole in the middle
- Set aside to rise for another hour then bake in a 200C oven for 8-9 minutes or until just cooked through
- Let cool slightly on a tray then add your favourite glaze and decorate with icing, chopped nuts, coconut or 100s and 1000s
